Kefir doesn’t have to be boring! You’ll love this Mocha Mint Kefir—-it’s almost like drinking melted ice cream, and it’s so easy to make.
Kefirs are among the richest sources of microbial species from a fermented food to repopulate your intestinal microbiome with beneficial species. Despite the lack of information on which strains are included in most commercial kefirs, adding kefir with its multiple species can still be a helpful part of your microbiome-building program.
Use either commercial kefir or a kefir you made yourself starting with a bit of commercial kefir or kefir starter. (Instructions to make kefir starting with a $2-5 commercial kefir is an inexpensive way to get started; see the recipe in the Super Gut book.)
2 cups kefir
1 teaspoon instant coffee granules
1 tablespoon unsweetened cocoa powder
1/2 teaspoon mint extract
Sweetener equivalent to 1 tablespoon sugar
Makes 2 servings
In a shaker (not a blender, as mechanical blending kills microbes), combine kefir, coffee, cocoa, mint, and sweetener and shake until well mixed. Serve cold or at room temperature.
